Orange Salad with Onion, Almonds, and Raisins

(Ensalada de Naranjas Tasca del Puerto)

Serves: 4


  • 4 tsp. golden raisins
  • Salad Dressing:
    • 3 tbs. extra virgin olive oil
    • 2 tsp. red wine vinegar, preferably raspberry-scented
    • 1/8 tsp. sugar
    • salt and ground pepper
  • 4 small oranges, peeled, cored, seeded, in 1/4-inch slices
  • 20 paper-thin red onion rings
  • 4 tsp. blanched almonds, finely chopped
  • mint leaves, for garnish


  1. Soak raisins in warm water to cover for 15 minutes. Drain.
  2. Whisk together Salad Dressing ingredients.
  3. Arrange orange slices. Scatter onion slices on top, then almonds, then raisins. Pour on dressing. Garnish with mint leaves.
