Stir-Fried Lima Beans

- 3 tbs. oil
- 1 10 oz. package frozen lima beans (preferably Fordhook),
- 1/2 tsp. salt
- 1/4 tsp. sugar
- 1/2 c. chicken stock or water
- 1 tbs. sesame oil
- Heat pan over until hot. Add oil, swirl, and heat for 30 seconds.
Add lima beans, and stir-fry for 30 seconds, until color deepens
into bright green. Add salt, sugar, and stock, and stir. Cover
and steam cook vigorously for 2 minutes. Uncover and stir rapidly
until liquid evaporates completely. Add sesame oil, stir, and
