Leek Salad with Tomato

From Copelan Marks, Great Book of Couscous

Ingredients:

  • 1 tbs. white vinegar
  • 2 tbs. olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. white pepper
  • 3 leek, white part only, sliced thin
  • 1 large ripe tomato ( 1/2 lb.)
  • 1 young Kirby cucumber, sliced thin
  • 12 black olives
