Cubed Liver Salad

From Paula Wolfert, Couscous and Other Good Foods from Morocco

Ingredients:

  • 1 lb. thick slices of calf, lamb, or beef liver
  • 1 clove garlic, crushed
  • 1.5 tsp. sweet paprika
  • 1 tsp. salt
  • cumin
  • 1/4 c. mixed chopped parsley and cilantro
  • 1/2 c. lemon juice
  • flour, preferably semolina flour
  • vegetable oil
