Tagine of Lamb, Pumpkin, Chick-Peas, and Raisins

Ingredients:

  • 3 lb. lamb shanks, sawed crosswise into 1-inch pieces
  • 1/3 c. grated onion (1 small onion)
  • powdered saffron
  • ground ginger
  • 1/2 tsp. ras el hanout
  • 3 soft sticks of cinnamon, or 1 hard stick
  • 6 tbs. unsalted butter
  • coarse salt and finely ground black pepper
  • 1/2 lb. dried chick peas, soaked overnight, or 1 c. canned chickpeas
  • 5 large Spanish onions (about 3/4 lb. each)
  • 2 lb. pumpkin or butternut squash
  • 1 lb. carrots
  • 1/2 lb. raisins, preferably Muscat
  • 1/4 c. honey, preferably orange blossom
  • ground cinnamon
