Savory Soy-Honey Chicken Thighs

Ingredients

  • 1.5-2 lbs chicken thighs
  • 0.25 c olive oil
  • 0.25 c dark soy sauce
  • 0.25 c honey
  • 4 cloves garlic
  • 1 tsp Dijon mustard
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 0.5 tsp black pepper
  • 0.25 tsp salt

Steps

  1. Mix marinade ingredients. Add chicken to marinade. Marinate in refrigerator, at least 30 minutes, ideally 2-4 hours.

  2. Preheat oven to 400°F. Place chicken on baking sheet and bake for 25-30 minutes, until internal temperature reaches 165°F.

  3. Pour leftover marinade into a small saucepan, bring it to a boil, let it simmer until thickened, and brush it over chicken before serving.

Notes

  1. I initially did this with 3.5 lbs of chicken thighs, so I doubled the marinade recipe. (I probably didn't need that much, as I only had 6 large pieces.) I ran out of honey, so I made up the difference with maple syrup. Recipe called for low-sodium soy sauce, which I didn't have. I substituted double-black soy sauce, and cut the salt in half.
