Water Chestnut Salad

Serves: 4

Ingredients

  • 1 c chopped fresh water chestnuts
  • 1 c chopped cucumber
  • 0.25 c pomegranate seeds
  • 2 tbs chopped spring onion
  • 1-2 tbs chopped peanuts
  • cilantro (optional)

Dressing:

  • 1 tbs tamarind pulp
  • 1 tbs honey or maple syrup
  • 2 tbs light soy sauce
  • 0.5 tsp chili oil or a pinch of chili flakes
  • 0.5 tsp roasted sesame oil
  • sesame seeds

Steps

  1. Combine ingredients in a mixing bowl. Whisk together the sauce in a separate bowl. Pour the dressing over the ingredients. Garnish with sesame seeds.

Notes

  1. I found this recipe on Instagram. Author unclear. I've taken some liberties.

  2. I didn't have pomegranate seeds or cilantro. I did add a diced red bell pepper. I used tamarind paste, and dark soy sauce.
