Water Chestnut Salad

Ingredients
- 1 c chopped fresh water chestnuts
- 1 c chopped cucumber
- 0.25 c pomegranate seeds
- 2 tbs chopped spring onion
- 1-2 tbs chopped peanuts
- cilantro (optional)
Dressing:
- 1 tbs tamarind pulp
- 1 tbs honey or maple syrup
- 2 tbs light soy sauce
- 0.5 tsp chili oil or a pinch of chili flakes
- 0.5 tsp roasted sesame oil
Steps
Combine ingredients in a mixing bowl. Whisk together the sauce in
a separate bowl. Pour the dressing over the ingredients. Garnish with
sesame seeds.

Author unclear. I've taken some liberties.
I didn't have pomegranate seeds or cilantro. I did add a diced red
bell pepper. I used tamarind paste, and dark soy sauce.
