Moroccan Anise Bread

From Jeffrey Alford and Naomi Duguid, Flatbreads and Flavors

Ingredients:

  • 2 tsp. dry yeast
  • 2.5 c. warm water
  • 3 c. hard unbleached white flour
  • 2 tsp. salt
  • 1 tbs. anise seed
  • 1/4 c. cornmeal, plus extra for dusting
  • 2-2.5 c. hard whole wheat flour, plus extra for kneading
