Orange Salad with Onion, Almonds, and Raisins
(Ensalada de Naranjas Tasca del Puerto)

Serves: 4
Ingredients:
- 4 tsp. golden raisins
- Salad Dressing:
- 3 tbs. extra virgin olive oil
- 2 tsp. red wine vinegar, preferably raspberry-scented
- 1/8 tsp. sugar
- salt and ground pepper
- 4 small oranges, peeled, cored, seeded, in 1/4-inch slices
- 20 paper-thin red onion rings
- 4 tsp. blanched almonds, finely chopped
- mint leaves, for garnish
Steps:
- Soak raisins in warm water to cover for 15 minutes. Drain.
- Whisk together Salad Dressing ingredients.
- Arrange orange slices. Scatter onion slices on top, then
almonds, then raisins. Pour on dressing. Garnish with
mint leaves.
