Pork in Sweet Soy Sauce (Be Celeng Base Manis)

Ingredients

  • 2 tbs oil
  • 5 shallots, peeled and sliced
  • 5 cloves garlic, peeled and sliced
  • 3 inches ginger, peeled and sliced
  • 1.25 lbs boneless pork shoulder or leg, cut into 3/4-inch cubes
  • 4 tbs sweet soy sauce (manic kecap)
  • 2 tbs soy sauce
  • 1 tsp black peppercorns, crushed
  • 2 cups chicken stock
  • 6-10 bird's-eye chilies, left whole

Steps

  1. Chop shallots, garlic, ginger, into a paste.

  2. Heat oil. Add paste, sautee for 2 minutes. Add pork, sautee for 2 minutes over high heat. Add soy sauces and pepper, sautee for 1 minute.

  3. Add stock and chilies. Simmer over medium heat for 1 hour. If meat becomes too dry, add some more stock.

Notes

  1. I think I used 4 chilies. It was a bit hot for my taste.
