Barbecued Pork Ribs

Ingredients
- 2.25 lbs pork spareribs, separated
- 1 onion
- 2 garlic cloves
- 1 inch ginger
- 1/3 c dark soy sauce
- 1-2 red chilies, seeded and chopped
- 1 tsp tamarind pulp, soaked in 1/3 c water
- 1-2 tbs dark brown sugar
- 2 tbs groundnut oil
- salt
- black pepper
Steps
Chop onion, garlic, ginger, and chilies in food processor to a paste. Add soy sauce, tamarind juice, brown sugar, oil, and seasoning.
Put separated ribs into a skillet. Pour sauce over ribs, bring to a boil, and simmer for 30 minutes, adding extra water if necessary.
Heat oven to 400F. Put ribs on a roasting rack. Reserve sauce to baste ribs, initially and as needed. Roast until ribs are tender, about 20 minutes.
Notes
Recipe calls for using tamarind pulp, soaked in hot water. I used tamarind concentrate, about 3 tbs.
