Barbecued Pork Ribs

Ingredients

  • 2.25 lbs pork spareribs, separated
  • 1 onion
  • 2 garlic cloves
  • 1 inch ginger
  • 1/3 c dark soy sauce
  • 1-2 red chilies, seeded and chopped
  • 1 tsp tamarind pulp, soaked in 1/3 c water
  • 1-2 tbs dark brown sugar
  • 2 tbs groundnut oil
  • salt
  • black pepper

Steps

  1. Chop onion, garlic, ginger, and chilies in food processor to a paste. Add soy sauce, tamarind juice, brown sugar, oil, and seasoning.

  2. Put separated ribs into a skillet. Pour sauce over ribs, bring to a boil, and simmer for 30 minutes, adding extra water if necessary.

  3. Heat oven to 400F. Put ribs on a roasting rack. Reserve sauce to baste ribs, initially and as needed. Roast until ribs are tender, about 20 minutes.

Notes

  1. Recipe calls for using tamarind pulp, soaked in hot water. I used tamarind concentrate, about 3 tbs.
