Mushrooms in Oyster Sauce

Ingredients

  • oyster and/or shiitake mushrooms
  • garlic, chopped
  • ginger, chopped
  • 2-3 tbs oyster sauce
  • 1 tbs brown sugar
  • 1-2 tbs black soy sauce
  • scallions

Steps

  1. Slice the tops of the shiitake mushrooms, discarding the stems. Chop the oyster mushrooms into 1-to-2 inch pieces., Mix the sauce ingredients.

  2. Heat oil. Scatter the garlic and ginger, then add the mushrooms and stir fry. Add the sauce and stir to cover and thicken.

  3. Garnish with chopped scallions.

Notes

  1. I improvised this because I packages of mushrooms that weren't otherwise being used, and had just finished the Indonesia greens recipe, which used oyster sauce. I remembered an Irene Kuo recipe for mushrooms in oyster sauce, and several other Chinese mushroom dishes, so thought this would work. It did.
