Chicken Cacciatore

Ingredients
- 1 4 lb chicken
- 2-3 tbs flour
- 1/4 c olive oil
- 2 tbs shallots, chopped
- 1 garlic clove, minced
- 1/2 c white wine
- 1/4 c tomato paste
- 1 tsp salt
- 1/4 tsp white pepper
- 3/4 c chicken stock
- 1/2 bay leaf
- 1/8 tsp thyme
- 1/2 tsp basil
- 1/8 tsp sweet marjoram
- 1/2-1 c sliced mushrooms
- 2 tbs brandy or 1/4 c Muscatel (optional)
Steps
Cut up chicken. Dredge pieces in flour. Heat olive oil and saute chicken pieces. Drain on paper towels.
Mix sauce: wine, chicken stock, tomato paste, spices, brandy (if using).
Saute shallots and garlic. Add mushrooms and briefly saute. Add sauce, stir, and return chicken. Bring to a boil, turn heat down, cover, and simmer for one hour (or until tender).
