Horiatiki Salad

Serves: 4-6
Ingredients
- 4 plump tomatoes, cored and quartered or cut into eighths
- 1 cucumber, peeled, cut into 1/4-inch slices
- 2 green peppers, seeded, cut into thin round slices
- 2-3 anchovies (optional)
- 15-20 kalamata olives
- 1 large red union, peeled, cut into thin slices
- 1/3 lb feta cheese, crumbled
- 1/4 c extra-virgin olive oil
- 1 tsp dried oregano
- salt, to taste
Steps
Combine tomatoes, cucumber, peppers, anchovies, olives, and half of onion and feta in a bowl. Strew remaining onion and feta on top. Dowse with olive oil, and season with oregano and salt. Toss once more before serving.
