Ingredients:
1 lb. calf, lamb, or beef brains
1/4 c. fresh cilantro, chopped
1/4 c. fresh parsley, chopped
1/2 tsp. cumin
1 tsp. paprika
2-3 cloves garlic
1/4 c. olive oil
1/3 c. lemon juice
1 preserved lemon
salt to taste
