Brain Salad

From Paula Wolfert, Couscous and Other Good Foods from Morocco

Ingredients:

  • 1 lb. calf, lamb, or beef brains
  • 1/4 c. fresh cilantro, chopped
  • 1/4 c. fresh parsley, chopped
  • 1/2 tsp. cumin
  • 1 tsp. paprika
  • 2-3 cloves garlic
  • 1/4 c. olive oil
  • 1/3 c. lemon juice
  • 1 preserved lemon
  • salt to taste
