Tagine of Lamb, Pumpkin, Chick-Peas, and Raisins

Ingredients:
- 3 lb. lamb shanks, sawed crosswise into 1-inch pieces
- 1/3 c. grated onion (1 small onion)
- powdered saffron
- ground ginger
- 1/2 tsp. ras el hanout
- 3 soft sticks of cinnamon, or 1 hard stick
- 6 tbs. unsalted butter
- coarse salt and finely ground black pepper
- 1/2 lb. dried chick peas, soaked overnight, or 1 c. canned chickpeas
- 5 large Spanish onions (about 3/4 lb. each)
- 2 lb. pumpkin or butternut squash
- 1 lb. carrots
- 1/2 lb. raisins, preferably Muscat
- 1/4 c. honey, preferably orange blossom
- ground cinnamon
