Macerated Berries with Vanilla Cream

Serves: 6



  • 6 c fresh mixed berries (scant 2 pounds), divided
  • 3/4 c sugar
  • 1/4 c orange juice

Vanilla Cream

  • 1 vanilla bean, halved lengthwise, or 1.5 tsp vanilla extract
  • 1 c chilled heavy cream
  • 1/3 c sour cream
  • 1/4 c sugar


  1. Using potato masher, mash 1 cup berries with sugar and orange juice in a large bowl, dissolving sugar. Gently stir in remaining 5 cups berries. Let set at room temperature, tossing occasionally, until berries are juicy, 1-2 hours.

  2. Scrape seeds from vanilla bean into a medium bowl. Add chilled cream, sour cream, and sugar. Beat until soft peaks form. Cream can be made 30 minutes ahead. Cover and chill.
